RIGHT. We did it! We decided to make the bacon lattice and roll it up with onion mash. However, we made too much onion and just put some onion inside and had mash with it. Unfortunately, the photos are a bit sparse, but here's what I've got.
Here's the lattice, frying in the pan. We forgot to take pictures while we wove it, but it's quite easy. We found you can fit 12 pieces of bacon into the lattice - 6 one way, 6 the other. You'll find the bacon exudes lots of baconjuice. It's not yummy like orange juice or man juice, so hold the lattice in place with a spatula and drain that stuff off.
Don't cook the bacon for too long or you want be able to roll it! Once the bottom is going brown, you should flip it over to cook the other side. If you're skilled like me you can use the pan to throw the lattice in the air like a pancake. My housemate videoed that, I'll get it here later. While the lattice is frying, prepare the onion.
Get some onions and peel 'em. We used three which was too many to mix with the mash and stuff inside the roll. I didn't mind because I love onion. Use your judgement.
Chop chop. Chop the onions into little 'C'-shaped slivers by halving the peeled onion and, with the flat side of the half on a chopping board, making lots of successive parallel cuts.
Take the lattice out of the pan once it's nicely done and put it on some paper towel to absorb the grease.
Give it a friendly pat.
Now the frying pan's free, bung all that onion in there.
Don't let it burn! (Arty shot from my housemate)
Peel and chop your potatoes - use about 2 per person for a good amount of mash.

Boil them for about 20 minutes in salted water.
Use the lid!
After the 20 minutes is up, mash the potato. Put in a knob of butter and a bit of milk. Once it's all munged around, taste it to check for seasoning, and add salt and pepper to taste.
Mmm! Onions are looking good now. Time to put them somewhere. We put them inside the bacon lattice, but we want to try it with mixing the onion and mash together for the filling:
To roll it up, spread a layer of onions (or your chosen filling) on top of the lattice, then roll it into a spiral, like a swiss roll. Put it in a roasting tin, and pop 'er in the oven for about 20 minutes, at 200 degrees (This could be while the mash cooks if you want separate mash)
Here's some onion mixed into the mash.
20 minutes later and here's the finished product - delicious bacon roll. We thought we didn't quite have enough, so next time I think we're going to make two. Yum!
